Fresh wild-harvested matsutake mushrooms extracted fresh into organic cane alcohol and decocted in fresh spring water. Extracting in both water and alcohol ensure that both the water-soluble and alcohol-soluble medicinal constituents were extracted. A powerful medicinal mushroom highly revered by the Japanese for centuries. Tradionally, young mushrooms are said to imbue the consumer with great vitality. A classic preparation was to infuse fresh matsutakes into rice wine or other alcohol spirits. This happens to be the only double extraction of matsutake on the market which I am very proud to offer.
